You Scream...I Scream...

Is there anything better than the company of an ice cream cone? One that absorbs your attention in every way, oozing coolness and delight, and with a flavour to match your every mood? Ice cream is to me what chocolate is to others...a devilish treat, with the addition of being allowed to eat it quickly before it melts! HOMEMADE Ice cream is frozen happiness, you cannot withhold a smile while eating it <3 for me...there is nothing a little ice cream won’t fix!

Here is a delicious simple homemade ice cream recipe to get you started off on your journey, along with some exciting variations and ideas...

Simple Homemade Ice Cream

2 eggs
1 cup sugar
1/4 teaspoon salt
2 1/2 cups reduced fat cream
2 cups half-and-half cream
2 1/4 teaspoons vanilla extract

1. In a heavy saucepan, combine the eggs, sugar, salt, whipping cream, and reduced fat cream.
2. Cook over medium to low heat while stirring constantly.
3. When mixture is thick enough to coat a metal spoon, and reaches about 70 ̊Celsius, remove from heat.
4. Set the pan in ice to cool quickly. Stir the mixture.
5. Cover and refrigerate until chilled. Or you can freeze the mixture immediately.
6. Once in the freeze set the timer and give the mixture a stir every 45 minutes to prevent ice crystals from forming on the surface.
7. Repeat this process about four times.

I changed my ice cream from simple vanilla by adding mint chocolate chips with a delicious outcome. You need to add other elements to your ice cream once it has begun to set (usually after the first three stirs) in order for it to not all sink to the bottom. See the results below!

The recipe can be modified to make almost any flavor of ice cream including one of my favourites which is lavender flavoured ice cream!Just add some dry lavender flowers at the same stage you would the chocolate and even some lavender essence if you wish!

Preheat the oven...

I think about food a lot...mostly I have visions of myself proudly presenting some beautiful looking baked treat to someone that I love. I decided to create this space to share my joys of all things baked and delicious J Now is as good a time as any to try out some classics, revisit family favourites, or embark on a new sweet treat adventure.
